Zucchini Gingerbread recipe




It is quite a time since I last time post the recipe, but I am back. This recipe is for zucchini gingerbread and is healthy, easy to make, and delicious! You don't need much equipment. Zucchini makes this gingerbread perfectly moist, and don't worry if your kids do not like zucchini. They will even not know that's inside!






If you look recipe with zucchini this may be right for you. Zucchini gingerbread is similar to gingerbread, but it is more healthy and the batter is more moist and soft because it contains zucchini.


You will love this recipe because:


You don't need much fancy equipment a bowl and spoon is all you need.


You can use any flour you like regular or wheat ...


It contains veggies and it is hidden so you will even not know that is inside, perfect heck for moms.


It is super easy to make.


If you have on your garden zucchini and you don't know what to do with it this recipe is the perfect choice for you.



What you will need.


You will need one zucchini or 2 small ones about 350 g.


You can make it like me to cake form in that case you will need as many ingredients as me or to baking sheet than double the amount of ingredients.



Zucchini Gingerbread



prep time: 15 minutes

cook time: 25-30 minutes

yield: 8 slices

INGREDIENTS


195 g all-purpose flour

175 g cane sugar

350 g zucchini

3/4 cup oil

2 eggs

1 tsp baking powder

cinnamon

1 tsp chia seed (optional)


sugar for sprinkle




INSTRUCTION


Preaheat the oven to 160 C. Layout the form with parchment paper. I use regular cake form, but you can use baking sheet if you want only double amount of ingredience.


Peel the zucchini. Grate the zucchini on fine grater and leave the juice from the zucchini. Add eggs, oil chia seeds and mix well.


Mix the flour, cane sugar, baking powder, cinnamon together in the bowl.


Add the wet ingredients to dry and mixt it.


Then transfer the batter to cake form or baking sheet.


Bake for 20-25 minutes or until a toothpick comes out clean.


Let cool and sprinkle with sugar and you can sarve.
